Our Story
Copabakery is a small business based in Burnaby and founded by
the award-winning chef Vanessa Fermit.
In 2020, after few years of experience in the culinary industry, Vanessa noticed the necessity of a business in Vancouver that could deliver signature flavors and crafted products with a Brazilian touch. There was no many options for quality crafted desserts with influence of the Brazilian culinary. So Vanessa decided to mix her Brazilian roots with the amazing culture of British Columbia. From this sweet mix, the idea of Copabakery was born.
In 2021, Copabakery (former Copacabakery) interrupted its activities due to Vanessa’s pregnancy and time off as a mom. During two years, Vanessa used the time to rethink and improve her brand and in 2023, with the support of her family, she relaunched it with a new identity and many new ideas.
All the products are made with top quality ingredients and always supporting local business in BC. Vanessa is responsible for picking each ingredient and create every recipe to ensure customers satisfaction.
Meet Chef Vanessa Fermit
Vanessa, originally from the vibrant city of Rio de Janeiro in Brazil, moved to Vancouver in 2015 to pursue her passion for the art of Baking and Pastry at the prestigious Vancouver Community College.
Over the years, Vanessa has developed a career as a Pastry Chef, winning the BC Spring Bake-Off competition in 2016. She has had the privilege of collaborating with renowned chefs and contributing her expertise to award-winning companies in the Vancouver culinary scene.
Vanessa is known for creating unique recipes that combine Brazilian flavors with professional tecniques. She always ensure the quality of the products and as Copabakery's founder she is ready to create new recipes and unique experiences that will surprise everyone.
